Watermelon, mango,pineapple, Feta and Mint Salad (AOF ep2)

Ingredients:
- 3 pounds seedless watermelon,rhine removed, cut into 1 inch chunks.
- 2 mangos cut into medium dice.
- 1 pineapple cut into 1 inch chunks
- 1 tablespoon juice from 1 lemon, zest skin of lemon with micro plane.
- ¼ cup roughly chopped fresh mint leafs
- 3 tablespoons extra virgin olive oil
- kosher salt and fresh ground black pepper to taste.
(Optional for roughage up to 4oz arugula leafs.)
- 4oz feta cheese
Process:
1. Place watermelon,pineapple and mango in a large bowl after cut.
2. Add lemon juice and zest to bowl with fruit.
2. Add mint, oil and( arugula if you choose) and toss untill watermelon is evenly dressed. Season lightly to taste.
3. Add in feta gently to bowl.
4. Plate. You can add more black pepper and feta on top of each serving for garnishment/presentation.
